Tuesday, May 22, 2012. Baked Parmesan Kale Chips. Wash the leaves well. Dry them with towels. Or those who have the Salad spinner can use it. Ear the leaves from the hard stem and place in bowl. Ohhhh look at me. Give it a few tosses to make sure the leaves are coated. Place on backing sheet and add fresh parm. Make sure not to overlap. Pop in the preheated oven. Bake them for around 10-15 minutes or until crisp. Cool them for few minutes before enjoying these crunchy health bites. Tania C. Calderón.

Tuesday, November 13, 2012. I have been harvesting all sorts of sprouts grown in my kitchen in a few mason jars on the counter. Have a look at these mung beans harvested today. After 5-6 days look how long they've grown. Into the compost the hulls go. Drying- Salad Spinner on the way. Here are the dry beans with the freshly washed mung beans as they dry. Wednesday, September 25, 2013. Ive got a Garden. With the move I now have a backyard for my dog Freyja to play in but I also have a garden. Here's a photo of the work we did yesterday to get our fall greens going. Off in the back is a gate to a bigger garden, but that's not quite ready yet. If you are like me than you know how growing brings out a whole other level of love, compassion, and appreciation. We are truly blessed, and I am very excited to share as we continue growing within. I haven't had any time for show off the progress of our garden nor have I made any yummies in our kitchen to blog about however I found this recipe today and thought, yea! Photos by kimberley hasselbrink. 1 pound zucchini (or any summer squash). 2 cups white vinegar. 4 garlic cloves, lightly smashed. 2 tablespoons sea salt. 1 tablespoon dill seeds. 2 teaspoons red pepper flakes. 1 teaspoon black peppercorns. 1 teaspoon mustard seeds.

Saturday, April 28, 2012. Rotolini agli Spinaci e Ricotta - Spinach and Ricotta Rolls. Cabernet is optional ;). 8 -12 oz. ricotta. 2 Tbs olive oil. 3 cloves of garlic. Once your dough has risen and ready to go roll it out into a rectangle 1/2in. thick. While the oven is warming up I like to saute my fresh spinach in the olive oil and garlic which I crushed and minced. Add a dash of sea salt and ground pepper for taste. In a large bowl mix cooked spinach with ricotta and parmesan cheese. Links to this post.
