In the next week or so we will be purchasing turkey parts and cooking them down into glaze to flavor various dishes on the Thanksgiving table. We’d like to use mostly necks, but they are not widely available. This pot used wings. Roasting the bones and mirepoix brings a nice dark color and flavor to the glaze. Good Stuff. 2 pounds turkey parts. 2 medium onions or leeks.

Black bean and garlic sauce. 1 pound carrots sliced thin. 2 cloves garlic, minced. 2 Tablespoons rice wine vinegar. 1 cup chopped cilantro. 1/2 cup carrot juice. 1/2 T sesame oil. 3/4 t ginger juice(minced ginger squeezed through cloth.). 1/2 T lime juice. 2 t curry powder, toasted and cooled. Sesame dressing for noodles. 2 cloves garlic, minced. 1 T ginger, minced. 1 t hot sauce.
