As I mentioned before we had a photo shoot for TMC Pulse Magazine. The magazine can be found in waiting rooms and hallways across the Texas Medical Center. The July issue will feature Team Texas and the Transplant Games of America. I was actually choose for one of the individual profiles in the feature which is super exciting! Chef With a View. A kitchen with a hell of a view. Cream Of Carrot Soup. 8 peeled and sliced carrots. 3 cups chicken stock. 2 minced cloves garlic. 2 tablespoons all-purpose flour. Combine the carrots, onion, bay leaf and stock; cover and simmer until tender about 30 minutes. Remove and discard bay leaf. Meanwhile melt the butter; cook the garlic over low heat until tender, stir in the flour, cook, stirring, over low heat for 2 minutes. Stir in the milk. Season with salt and pepper. 4 ounces cream cheese.
