LIME RICE: LIME RICE

Rice – 1 cup. Water – 3 cups. Gingelly Oil – 2 tablespoons. Turmeric powder – ¼ tsp. Salt – to taste. Red chillies – 5. Garlic – 1. Curry leaves – a few. Urud dhal – ½ tsp. Channa dhal – 1 tablespoon. Milk – ¼ cup. Cook the rice with salt to taste in 3 cups of water. The cooked rice on a tray(this is to keep the grains separated and fluffy). Squeeze the juice of the lemons on this rice and mix gently. Heat the oil in a pan. Add the mustard and let it crackle. Add the rice to the above and mix well.

YELLOW RICE: YELLOW RICE

Basmati rice – 2 cups. Oil and ghee combined – 4 tsp. Coriander leaves – ¼ cup. Mint leaves – ¼ cup. Vinegar – 2tsp. Turmeric powder – 1 tsp. Salt – to taste. Big onion – 1(cubed finely). Green chillies – 10 (Slit). Ginger garlic paste – 1 tsp. Cinnamon – 1” piece. Cloves – 4. Fry the Basmati rice in 1tsp ghee and keep aside. Heat the oil and ghee in a pressure cooker and fry the cinnamon, cloves, and cardamom till you get the spicy fragrance. Add the ginger garlic paste and fry a little.
