Sunday, August 29, 2010. Of 3 Eggs and a Little Wine. I always look forward to leftovers. Maybe it’s just a fetish and somehow I look forward to them every single time I open the refrigerator to decide what I am going to cook up. This Sunday was no different. Dreary eyed and slightly hungover from the night before, I dragged myself out of bed to hydrate and fill up. Leftover Spinach and Corn casserole. A glass of Bio-White Wine (I’ll get to this in a while). Few Slices of Bread. An intact Tin of Cheddar.

Iddiappam is quick and healthy as it is steamed. It’s a culinary specialty in Tamilnadu, Kerala. Coastal areas of Karnataka. Is also popular in certain areas of Srilanka.

Here is one such recipe I have never even tried to make, but made it perfect for the first time and outcome so delectable! Rich amber colored, sweet and indulgent with a hint of lemon makes yummy accompaniment to fresh bread for breakfast but if your imagination rolls it can be a topping for pies, cakes, icecream, biscuits and much more. Pineapple can also be used in the same recipe but cinnamon should be avoided then.
