Cooking From the Cave. 4-5 dried anaheim peppers. 4-5 dried pasilla peppers. 1/2 diced yellow onion. 6 whole cloves garlic. 3 1/2 cups vegetable or chicken stock. 1/2 yellow onion diced. 1 green zucchini diced. 1 green bell pepper diced. 1 yellow bell pepper diced. 1 can black beans. Cooking oil and canola spray for saute. Cilantro, scallions, farmer’s cheese, and sour cream for garnish. Serves 2-4 as an entree. Blend the chile sauce at high speed for 2-3 minutes in a blender, taste and adjust seasonings.

Pan Seared Halibut with Roasted Asparagus and Beurre Blanc Sauce. 2 6-8 oz halibut filets. 1 cup white wine. 1 stick of cubed, frozen butter. 12 sprigs of thyme plus the leaves of 3 sprigs of thyme reserved for plating. 6 garlic cloves, pressed. Olive oil for saute and to coat the asparagus. Salt and pepper to taste. Serves 2 as an entree. Place a large portion of asparagus on the plate, top with the filet and then ladle 1/4 cup of the beurre blanc sauce over the top.
