Cooking the hard way. Potato and Green Bean Salad with Smoked Trout. Boil some halved or quartered new potatoes. I was surprised to find that mine were bright pink all the way through. During the last minute or so of cooking throw in a handful or two of green beans. While the potatoes are cooking make a little vinaigrette with some white wine vinegar, grainy mustard, olive oil and salt and pepper. And maybe a little squeeze of lemon. If you've been following this blog over the few months of its lifespan so far, you may have noticed the uncomfortable pause of the last several weeks. That would be the final installment of the Chicago Restaurant Adventure, which is proving remarkably resistant to cogent analysis. I've been thinking about how to approach the subject, and have started different versions of the essay half a dozen times, only to run out of steam and delete the effort with frustrated resignation.
