Use up all that extra zucchini from your garden by making these ultra moist and delicious Chocolate and Zucchini Protein Muffins. They are rich but still pretty good for you. Notes: Next time we are going to try adding an extra 1/4 cup of protein powdered to this recipe to see how it turns out. That would bring the total amount of protein powder to 3/4 cup. I knew beforehand that the first recipe I was going to make was the Blackberry Crumb Pie featured on the front of the cookbook. It had been mentioned in many reviews of the cookbook as the best recipe in the bunch, so of course I had to try it.
