The CrossFit CENTCOM Paleo Ride. January 6, 2013. I got this recipe from the Everyday Paleo Family Cookbook. You could really use anything you want in it. I made the recipe as is and it turned out great. I will experiment with different veggie next time. 2 TBSP coconut oil. 1 cup grated sweet potato. 1 cup grated zucchini (squeeze out excess moisture after grating). 2 TBSP minced Italian parsley (I used dried – it was all I had). 1 cup diced ham. 12 eggs, whisked. Finely chopped steak (similar to Steak-ums but I went with the Steak-EZE brand). Coconut or Olive Oil. As many eggs as you would like. Chop and saute the veggies in oil until softened. Set aside.
