Since I’m not at home and won’t be for a long time (3 months of study abroad in England, currently on vacation in Madrid) this blog will probably end up having a lot of pictures of food that I didn’t cook. We went to a restaurant called Taberna de Conspiradores tonight, and I got the only certifiably vegetarian item on the menu – a dish of seasonal vegetables that were kind of stewed in a tomato-ey buttery slightly cheesy sauce. Sweet and sour tofu stir fry with whole wheat couscous.

So I made salad, with all the vegetables we had, some leftover cous-cous, and a little feta cheese. Our house is too far away from anything to order pizza, so we’ve been making our own for years. 1 cup warm water. 1 packet active dry yeast. 3 1/4 cups bread flour. 2 T olive oil. Soften yeast in water with sugar, mix in remaining ingredients. Knead for 10 minutes (a bread hook works well for this). Put in a greased bowl and cover, let rise to double and then roll out. Bake at 430 Fahrenheit for about 12 minutes, or until the bottom is crisp. September 19, 2011 at 7:59 am.

Our favorite restaurant in Lexington is King Tut’s (S Limestone and Maxwell…do yourself a favor), a Mediterranean place with the best vegetarian platter I’ve ever encountered. Here is our recreation of it: tabbouleh, mujaddara, falafel, hummus, and pita.
