Tirsdag den 30. april 2013. Jeg havde noget yoghurt stående jeg ikke lige havde fået brugt. I stedet for at smide det væk, varmede jeg det lige op knap til kogepunktet og hældte det i et osteklæde. Søndag den 15. juni 2014. Så blev det tid at skære min manchego i stykker. I lang tid har jeg bemærket, at den havde nogle blå mærker under skorpen på den ene side. Jeg var meget spændt da den blev skåret over, her er billede af hvad jeg fik at se. Jeg begyndte at skære alt det blå væk og det blev til lidt over et kg. Mandag den 23. december 2013. Jeg har lige lavet min til dato største ost, en Romano af 28 liter råmælk, fra jersey racen. Fedt er 6,13% og protein er 4,30. Jeg skummede en liter fløde af mælken, som jeg har lavet lakridsis af. Her kommer opskriften på osten. Mælk, tykmælk og lipase varmes langsomt op til 33 grader og syrner under låg i 15 min. Osteløben som er udrørt i ca 60 ml kogt koldt vand, røres i mælken og der blandes godt i et par minutter. Ostekornene hældes over i en osteklæde foret form. Min g...

Lørdag den 22. marts 2014. Market - Making Artisan Cheese at LoveTree Farm. Denne video viser hvordan der laves ost, jeg blev lidt fascineret af faconen på osten og tænkte, det vil jeg da også prøve. Jeg har en sigte der minder lidt om den de bruger, at lave ostene i. Jeg valgte at lave den som en halvfast ost. 1 dl ymer fra Thiese. 2½ ml. osteløbe opløst i 50 ml. kogt koldt vand. 1 spsk. tørret ramsløg. Ymer og mælk varmes op til 34grader og hviler under låg i 25 min. Som i kan se blev formen godt fuld.

Osten er lavet efter opskriften i Homemade Cheese. Jeg vendte osten hver uge efter den blev lagt i modnings skabet og kunne se den blev buttet og fin. Spændt ventede jeg de tre måneder og endelig skulle osten så åbnes - og vupti. Så var den sprækket helt midt i. Onsdag, februar 19, 2014. Tirsdag den 4. februar 2014.
