Diary of an Aspie Wife. Diary of an Aspie Wife. March 27, 2016. I am Betsy and I am married to Adam, who while has never been diagnosed, exhibits the characteristics of Aspergers. He is incredibly high-functioning, to the point where the average person would never think he has it. Some members of my own family don’t believe it. He is very intelligent and kind, though he has social struggles that have improved as time has gone on. Betsy and Adam are not our real names out of protection of our privacy.

February 25, 2015. Low Carb Pecan Pie. I love pecan pie. Love, LOVE, LOOOVE, LOOOOOVE. At Thanksgiving, this was the thing I was most looking forward to cheating on from staying low carb. 3 eggs, beaten. 240g powdered sweetener (Splenda). 240ml sugar free maple syrup. For the crust, mix together the ingredients, press into an 8 or 9 pie plate and refrigerate. Beat the eggs with the Splenda. Add the vanilla, butter and syrup, then add the pecans. Pour into the crust and bake at 180c for about 45 minutes.

Parmesan Roasted Cauliflower Recipe. 8 oz cauliflower florets, sliced horizontally. 2 tablespoons melted butter. 1 tablespoon olive oil. 3 light dashes of ground black pepper. 1/2 cup Parmesan cheese. 1 teaspoon chopped parsley leaves. Preheat oven to 425 . Toss the sliced cauliflower with the butter and olive oil. Season with salt and black pepper. Transfer the cauliflower to a baking sheet, in single layer, roast until almost tender about 35-40 minutes. This entry was posted in Food.
