This traditional casserole made from British beef is cooked in rich, dark beer and topped with wholegrain mustard croutons. 165 minutes = 2 hours 45 minutes. 2 tbsp vegetable oil. 15kg diced stewing steak. 2 medium onions, finely sliced. 2 tbsp plain flour. 1 tsp light brown muscovado sugar. 2 tbsp red wine vinegar. 500ml bottle dark beer (e.g. Guinness Original). 150ml hot beef stock. 1 sachet bouquet garni or 1 tsp dried mixed herbs. 1 can of black beans. 1 can of sweetcorn or 1 cup of frozen sweetcorn. 05 small red onion. 1 clove of garlic. 2 cups of grated cheese. 2, with some to spare. Mix beans, sweetcorn, chopped onion, crushed garlic, grated cheese, seasoning. Place around a cup onto half of a tortilla, fold over. Fry on each side until golden brown and the cheese has melted. Roast Potatoes

Peel potatoes and chop into even-sized chunks. Heat oil / fat in a large roasting tray at 200 C. Boil the potatoes in lightly salted water until done. Drain the potatoes in a colander, shaking and tossing with flour until thoroughly roughed and floured. Put the potatoes in the roasting tray, tossing so they’re covered in oil. Roast the potatoes for 15 minutes, then take them out and turn them. Roast the potatoes for another 15 minutes, then take them out and turn them yet again.

Lentils and Bacon

Based on a recipe from Nigel Slater’s The 30-Minute Cook. But even simpler - lardons from the freezer, lentils from the cupboard - one of my favourite comfort foods. Serves 2 - not a large amount, but filling. 100g red split lentils. Rinse the lentils under cold water. Fry the lardons until soft and verging on crispy. Add the lentils and enough water to cover by a cm or so. Boil until verging on dry. Recipes - collected by Kristian Glass.
