Spanish Beef

1 kg diced braising steak. 2 medium onions cut into wedges. 2 red peppers, deseeded and chunked. 2 cloves of garlic, peeled and crushed. 225 g chorizo ring, thickly sliced. 1 tsp crushed dried chillis. 1 tsp ground cumin. 2 tsp smoked paprika. 800 g chopped tomatoes (2 standard tins). 2 tbsp tomato purée. 800 g kidney beans (2 standard tins), drained and rinsed. Set the oven to 160C. Brown the meat and transfer it to a casserole pot. Fry the onions for 5 minutes. Recipes - collected by Kristian Glass.

Feta-Stuffed Peppers

3 large green peppers. 1 can chopped tomatoes, drained. 1 handful risotto rice. 35 mins prep, 30 mins baking. Halve and seed peppers, boil for 3-5 minutes. Drain and rinse in cold water, dry with paper towels. Heat oven to 180C. Fry onion and lamb until brown. Stir in tomatoes, spinach, risotto rice, oregano, salt, pepper. Bring to a boil, reduce heat, cover and simmer for 5-7 mins. Sprinkle with feta, bake for another 5 minutes or until cheese is softened. Recipes - collected by Kristian Glass.
