In Austria yesterday, it was sunny and 20 degrees. Early last year, Steven tried to talk me into a cycling trip in Europe. I was having none of it! We got back on the train, and headed for the canals of France instead.

Eating My Way Back. A vegan and healthy cottage cheese, made by Me! Game Changing Vegan Cottage Cheese. 1 350g package of organic extra firm tofu, rinsed, mashed well by hand with a pastry blender. 3 Tbsp plain coconut yogurt. 1 tsp fresh lemon juice. 1/2 tsp sea salt. 1 tsp garlic powder. 3/4 tsp onion powder. 1 tsp Apple cider vinegar. Freshly ground black pepper. Mix by hand the above ingredients, and be blown away! I have found it for my tastes at least! By eating MY way back. By eating MY way back.

It arrived fairly quickly, with a buttery pastry sitting atop a mixture of white meat chicken chunks, peas, potatoes, and carrots coated with a savoury chicken gravy.
