In 19 days I leave for East Africa. It has been almost three years since my last trip and each day I get more and more excited about seeing the children of Amazing Grace in Adjumani, Uganda. I tell you this story because if a small child can get it, why can't we? Can you give above and beyond what you normally give?

Traveling the rocky road. Portobello and Black Bean Quesadillas. March 1, 2016. Today, March 1, we kick off Rice and Beans Month. I’ve done this exercise of solidarity for 6 years now. To ramp up, last night I made Portobello and Black Bean Quesadillas. From Cooking Light. They feature a lot of mushroom to give you that heartiness that meat tends to bring. They were fast to make, included only a few ingredients and were tasty. Today I put a pound of black beans in the slow cooker. The children in Africa.
