Monday, 20 May 2013. Italian Salumi Day at Empire Farm. Recently we held an Italian Salumi day at www.empirefarm.co.uk where we started with a whole half pig to butcher Italian style. The class all got a chance to take part in butchering sections and had we had known that Andrew from Hong Kong was an Ear, Nose and Throat Surgeon in his day job, we would have given him the head to work on.(next time Andrew! Thursday, 21 February 2013. What is Colonial Goose I hear you say? In order to get a silky brown colour to the joint, it would be marinaded in red wine thus taking on the rich colour of a real goose. Personally I would cure my joint in salt for at least 3 weeks before butchering and stuffing as this imitates the goose better than just using a wine marinade. Wellington has to be one of my favourite dishes of all time – the crackle of the breaking puff pastry shell followed by the steaming moist meat of the rare fillet inside. Comfy, cosy and filling – this dish has all the things you want when it’s soggy and grim outside. Now however, it’s time to try and make my own! 2 x tbsp juniper berries (crushed). Pinch of salt and pepper. 1 x duck egg (beaten). 120 ml double cream.
