He had it down to a tee just how he liked it. Id watch him pour in his muesli and then sprinkle it with extra nuts and top of with grapes, banana and always some green apple. Their deep purple, glossy skins just look so sumptuous and inviting. I love them charred on the hob and turned into a smoky baba ganoush, they just work so well with the middle eastern flavours. Aubergines with feta, lemon, parsley and almonds. Adapted from Simon Hopkinson. Serves 2 as a main Prep 10 mins Cooks 20 mins. Juice of 1 lemon. Zest of 1 lemon.

Jelly isn’t something I would usually choose off a desert menu, I would go for the cake or tart but sometimes jelly is just right. Its right after a large meal, or on a summers evening when you want something light and palate cleansing. Gooseberry and elderflower jellies. 25 mins plus at least 2 hours to set.

I’m going through a transition phase in my life… I’m trying (as much as I can) to eat and feed my family healthy food, and when I say healthy I don’t mean stuffing my 2 year old nursery lunch box with processed meat and cheese, throw in carrot and cucumber sticks with a carton of high sugar fruit juice and call THAT a healthy lunch box!
