Søndag 24. juni 2012. Hjemmelaget potetmos er både raskt og enkelt. Har man litt ekstra tid, kan det bli særdeles godt. Jeg må nok innrømme at jeg har brukt mye tid på britiske fjernsynskokker. En av mine absolutte favoritter er Heston Blumentahl. Og hans kjemiske tilnærming til matlaging. Potetmosen får et helt nytt smaksnivå, mår den lages slik han gjør det. Mandag 9. august 2010. Min danske stemor er som undertegnede, glad i god mat og god drikke og ikke minst god kaffe. Denne sommerferien introduserte hun meg for en nyhet på kaffefronten. Resultatet er rett og slett en snasen traktekaffe! Selv i jobbkaffetrakteren ble denne kaffen meget god. Nytes gjerne sammen med en kæmpeskilpadde (sjokolade fyllt med romkrem og karamell). Tirsdag 14. februar 2012. Lammekjøtt er godt året rundt. Når jeg ser lekker lammebog ligge i kjøttdisken, må jeg bare ha det. Etter en del eksperimentering har jeg kommet frem til en enkel lammegryte stappfull av smak. Det er ganske vanlig å stikke hvitløksbiter i lammelår som skal helstekes. Så hvorfor ikke gjøre det samme med skiver av bog som skal kokes i en gryte? Jeg kan opplyse om at det fungerer meget bra! Ca 1 kg bogkjøtt av lam. Salt og pepper som drysses rett på kjøttet før det legges i gryten.

Mandag 18. oktober 2010. Amerikanske viner, ihvertfall californske, er blant mine favoritter, og har vært det i en del år nå. Helt siden jeg første gang oppdaget vinen Sebastiani laget på Zinfandeldruen. Eller kalt en vin " Big Ass Cab. Forøvrig en av de beste vinene jeg noen gang har drukket, men finnes dessverre ikke på polet)? Nå selges i papp på polet. Jeg kjøpte den selvfølgelig og det er virkelig en snasen vin som jeg anbefaler flere å prøve. Den er ganske kraftig og smaksrik, litt sødmeful...Hvilk...

Søndag 24. juni 2012. Jordbær kan brukes på mange måter. Også til saltmat. Jeg brukte en halv kurv jordbær og passe mengde parmesan revet med ostehøvel i ikke for store biter. Dette badet jeg i balsamicoeddiken som nylig ble kjøpt, og lot stå til godgjøring i 1 times tid. Det hele ble servert - med stort hell - til ovnsbakt indrefilet av svin. Legg inn en kommentar. Søndag 24. juni 2012. Jeg er veldig glad i indrefilet av svin. Gjerne innsmurt i sennep og svidd på kullgrill. Det finnes selvsagt mange andre varianter og jeg har testet ut litt forskjellig. For å sikre et saftig resultat kan man pakke kjøttet inn i bacon eller spekeskinke. Oppskriften under har jeg prøvd både med parmaskinke og strandaskinke, hvor sistnevnte faktisk ga best resultat. 600-800 g indrefilet av svin. 3 ts grov sennep. Saften av 1/2 lime. 1-2 ts svart grovkvernet pepper. 3 ss creme fraiche.

Søndag 22. april 2012. Ribbe er godt året rundt. Til jul lefler man ikke med tradisjonene, men lager den slik Hellstrøm. Gjør Resten av året derimot, er det lov å eksperimentere. På sommerstid er det for eksempel knallgodt å ha ribben på grillen den siste halvtimen av steketiden. For en stund tilbake ble jeg inspirert av Tom Moen (@macini). Ca 1,3 kg ribbe. 2 små (sterke) røde chili (finhakket). 4 fedd hvitløk (finhakket). 2 håndfuller fersk timian (finhakket). 1 ts mexicansk chilipulver. 2 ss grov sennep.

Tirsdag 15. juni 2010. Vi er nå godt inn i Grillsesongen, og grillspyd hører hjemme i denne høytiden. Okse, svin, kylling, fisk og lassevis av grønnsker gjør det mulig å lage noe som passer til alle, være seg kjøttmumser, fiskeelskere, barn eller vegetarianere.
