Green Pekoe Brined Pork Loin. 1 quart cold water. 1/3 cup sea salt. 1/3 cup brown sugar. 2 tablespoons Green Pekoe Tea. 2 lb pork loin. 2 tablespoons cooking oil. Bring water, salt, sugar, and peppercorns to a boil. Remove from heat and add tea. Cool solution to room temp. Place pork loin in a self sealing plastic bag and add enough solution to cover. Place sealed bag in a large bowl (just in case it leaks). Links to this post.

I first read the recipe at Simply Anne's. Had to try it- with a few changes. The original recipe used dried mango and real eggs. 8 T butter, room temp. 6 oz cream cheese, room temp. 2 t baking powder. 2 C cake flour. 1 C egg substitute. 2 t lemon zest. 2 oz chopped dried apricots. 2 T lime juice. 5 t lime juice. 1 C powdered sugar-sifted.
