Tuesday, May 11, 2010. You will need: Tapioca flour, grated cheese (I used Mexican queso fresco), salt, olive oil, milk, and an egg. Place all the ingredients in a blender and give it a whirl. You will have to scrap down the sides of the blender so that all the ingredients get well combined. At this point you can either bake some cheese bread or you can refrigerate the batter for later use. 1/3 cup olive oil. 1 1/2 cups tapioca flour. 1/2 grated cheese (a used Mexican queso fresco). I have made it twice in the last 3 weeks and it has been a hit each time. Simply wrap 1/2 a slice of prosciutto around a cleaned de-veined shrimp. Make as many as you want. Monday, March 22, 2010. Fufu de Platanos - Sweet Plantain Mash. Here is what you'll need. It is an overcast and rainy day in Miami, so the lighting for the pictures stinks. Cut up the plantains into chunks. Peel 2 cloves of garlic. Put the plantain chunks and the garlic cloves in a pot of water and boil until the plantains are tender. About 20 minutes. Chop a small onion. It will be about 1/2 cup. Once the plantains are tender, carefully remove the plantain from the boiling water. 2 garlic cloves, peeled.

Thursday, April 29, 2010. APORREADO DE POLLO - SHREDDED CHICKEN. TGB has requested that I make a "South Beach Diet friendly" recipe. I think this is it. I will let you know what TGB thinks of this dish later. It was really yummy and my daughter couldn't wait until dinner time to try it. She had a plate of the chicken (with no onions or peppers) while she waited for the rice to cook. I heated about 1 tablespoon of olive oil in a heavy pan. When the chicken was almost done, I thinly sliced half an onion.
