I honestly can’t remember the last time I had trifle and I don’t think it’s something I have ever made before, I actually decided to make this after my 8yr requested it! I do not have any nice glass dishes that would suit for this, but I was able to borrow my grannies trifle dish, which I think is quite fitting considering this was her book! One of the things that I’ve liked about this book is that it has given me ideas for jazzing up something simple like peas! I pretty much just boil peas so it’s nice to try recipes like this to make the humble pea more interesting! The recipe says shelled peas but I only had some frozen peas, so I let them defrost for a bit and then fried them in butter for a few minutes. Then I added the onion, salt, pepper and some stock. As expected the peas are really soft but taste great! Would I make this again?

For the last 2 years that I have been cooking from this book I have forgotten about these each Easter, so this year decided to give them a go. What I find a bit unusual about this recipe is that the cross is just marked on, it does suggest an alternative shortcrust pastry cross, but I thought they usually had a piped on cross. Anyway I made up the dough and left to rise for about an hour. It’s not the softest dough and was actually not easy to roll into nice round shapes. Well these are pretty great!

Good old fashioned cooking. Posted in Jams, Jellies and Marmalades. The jam, jellies and marmalades chapter is another one I’ve maybe neglected a little and still have a good few to try! I made this last night to allow to cool for testing tonight. It may seem unusual to be making jam on a Tuesday night but just goes to show how easy it is! I had one cooking apple that weighed just under 1 pound so I quartered everything else. So first I chopped the apple. Now I do love it! Well it is a very thick jam!
