Monday, November 29, 2010. In case you were wondering.since we haven't posted in a while. We are doing just fine, except that we've both been. Busy John is just about to wrap up his Masters degree in Spatial Science. His defense is at 8am on Thursday! Here's a LiDAR point cloud he made for his presentation-. I am finishing up my first semester of library school. Lots of busy work, let me tell you, but I hope to be done with it (for a month, anyway) by the end of next week. One step at a time. I want the world. Berlin and Paris 2009. Tuesday, November 1, 2011. Less than a month! I feel like rambling. In less than a month I will be getting married to my best friend. It's awesome. And I'm finally, FINALLY ready to start getting fit again. I think. I'm committing to myself in print right here and right now that I am going to get up early tomorrow morning and do something. Tuesday, August 24, 2010. John and I drove up to Denton to visit my sister during Memorial Day weekend back in May. She made us the most delicious vegan enchiladas. I'll share my variation of her recipe with you here! For four GIANT enchiladas (we buy the big "burrito-size" flour tortillas) you will need:. 4 big flour tortillas. 3 cans enchilada sauce (we used two red, one green). 1 can green chilis (use the diced, not the whole). Two big poblano peppers (we used one because we only had one in the fridge).
