I ended up dividing the batter between two different baking dishes, one small round one so I could frost the cake pictured below, and a larger round dish that I took to the potluck. They both turned out very well! 2 1/4 cups all purpose flour. 1 tsp baking powder. 1 tsp baking soda. 1 tsp ground cinnamon.

It's reaching up into the 100's this weekend, so I decided a nice light salad would be just the thing for staying cool. Spinach and Fruit Salad with Tumeric Chicken. Cinnamon, just a dash. Mix together spices, sprinkle on chicken, along with corn starch and a bit of water. Fry chicken in olive oiled pan under browned. Set aside. Onion, thinly sliced. But this weekend was snowy and gray, so I plopped down in front of Pinterest to find inspiration for a new recipe. This is what I came up with. And it is very yummy. Potato Leek Soup with Beef and Arugula. Stew beef, cubed in small pieces. Yellow Potatoes, cubed in bite-sized pieces. 1 carton Chicken broth.

It can also be made as a salsa (minus the lettuce), but I wanted it to be more filling. And then what Fourth of July isn't complete without a Blueberry Cheesecake? Black Bean, Feta, Corn Salad. 1 bag of chopped Romaine Lettuce. 1 cup chopped Cilantro leaves. 1 cup Black Beans. 1 package of Feta cheese, finely cubed. Juice of one Lime.

Monday, May 18, 2015. Something Went Horribly Wrong. As I mentioned in my last post, we have a new baby around here! New babies are sweet, snuggly, and MASSIVELY TIME CONSUMING. The factory settings for a standard-issue baby take up quite a lot of time, and then when you throw in add-ons like personality, medical issues, sleep regressions, growth spurts, etc, it can really drive up the total pretty fast. We were given the Super Deluxe Primo Edition baby when it comes to how much time her care requires.
