I miss cooking with him, all the while chatting and eating in silence together, as most Balinese do. I miss a lot of things about Komang, not only cooking but it's 7pm and I am hungry! For the Crème Anglaise:. 1/2 cup of sugar. 2 cups of milk. Grated zest of 1 small lime. A handful of lime blossoms. A handful of jasmine blossoms. 1 vanilla bean split in two. In a saucepan, bring the milk to a boil with the vanilla bean, grated lime zest, lime leaves, lime and jasmine blossoms. 2 Tsp of sugar.

My mother in-law, Ibu Boni, still makes Nasi for the day the traditional way: soaked, steamed in a conical bamboo basket in an aluminium pot set over a wood fire, soaked again and steamed one last time. When we have left over rice, Komang makes Nasi Goreng (his way) and when we have lots of time, I make Nasi Kuning (my way). 1 tsp fish sauce.
