Akara: black-eyed pea fritters. Okay, I ran out of smart balance mayo and thought I would try to make my own soy based mayonnaise for my egg-less egg salad sandwiches. I looked over a number of recipes and the ingredients I had in my house and came up with this one:. 1/3 cup organic unsweetened soy milk. 3/4 teaspoon apple cider vinegar or regular white vinegar. 1 small pinch of ground mustard. 1/2 teaspoon salt, fine not kosher. Mason jar with lid. As it continues to mix add in the salt and mustard.

Akara: black-eyed pea fritters. 1 container organic tofu- firm. 1 small sweet yellow onion - diced or thinly sliced. 1/2 cup shredded carrots. 1/2 cup diced red bell pepper. 1/2 cup thinly sliced celery. 2 tablespoons vegan mayo (See my recipe for Vegan Soymilk Mayo. 1 teaspoon Worcestershire Sauce. This takes very little time to make and I eat it about once a week. This has been known to win over even the anti-tofu crowd. You might want to taste test it now and add some salt and pepper or more mayo.

Akara: black-eyed pea fritters. Two cups of Soy milk mayo. 1/2Tbsp low sodium soy sauce. 1 tsp dry mustard. 1tbsp dry basil or fresh chopped. One clove garlic minced. 1/2 tbsp rice vinegar (or any good vinegar ). This is really too easy. Just the ingredients and whisk. I like mine thick but you can add some soy milk to thin if you like.
