How to skin a black-eyed pea
Akara: black-eyed pea fritters. One cucumber diced (large). Box of cherry tomatoes halved or whole. 1 Bunch of organic parsley (chopped without long stems). Olive oil 3 tablespoons. One clove garlic minced. 1 tablespoon of lemon juice or vinegar. Bring water and bouillon to a boil. Wash quinoa. You will need a fine sieve or fancy skills. Add quinoa and simmer on medium low for 15-20 minutes stirring once or twice. There will be minimal liquid left at this point. Posted by D. Worth Doty.
