Risotto with leeks, shiitake mushrooms, and parmesan. June 23, 2009. I really enjoy risotto but I’ve never had one that completely knocked my socks off. Before last night, the closest I’d come to risotto nirvana is the delectably creamy butternut squash risotto at the fabulous Chester’s Chophouse. In Wichita (fine dining in Wichita? I fed 5 people this risotto alongside parmesan-crusted lemon chicken breasts. Everyone loved it! 3/4 cup whipping cream. 1 large onion, halved, thinly sliced lengthwise.
