If your cake requires 1 hour of baking time, place a baking paper to cover the top of the cake after 45 minutes of baking. Normally the top of the cake will be near the top oven coil and therefore baked faster than the rest. Another factor is to prevent the top of the cake to be too dark while the rest of the cake is still being baked. December 24th, 2011.
