The best things about life. Wednesday, October 7, 2009. Gluten Free Pumpkin Spice Muffins. 350 grams pre-mixed gluten free muffin mix. 1/2 cup chopped pecans (packaged not bulk). 1 cup cooked pumpkin (Western Family is GF, I used that one). 1/3 cup olive oil. 1 teaspoon vanilla (Club House Vanilla Extract is GF). So I used a pre-mixed flour mix for my muffins, and it worked out really well. I'm still not sure how to mix all my flour's properly but this pre-mix was awsome! Totally a challenge for me!
