Gluten Free Pumpkin Spice Muffins. 350 grams pre-mixed gluten free muffin mix. 1/2 cup chopped pecans (packaged not bulk). 1 cup cooked pumpkin (Western Family is GF, I used that one). 1/3 cup olive oil. 1 teaspoon vanilla (Club House Vanilla Extract is GF). So I used a pre-mixed flour mix for my muffins, and it worked out really well. I'm still not sure how to mix all my flour's properly but this pre-mix was awsome! Totally a challenge for me!

It was a fantasticly beautiful fall day in Lethbridge today, the leaves are starting to change color, the nights are getting cold, and it feels like fall. I luv this time of year! It brings back a million childhood memories of birthday parties, thanksgiving, and halloween costumes. And there are always so many good things to come in the fall! It just makes me smile :). The Time of our Lives. Friday, March 5, 2010. This is my 100th Post.why NOT celebrate with my latest accomplishment. I am now officially in the Half CLUB! What the HALF club you ask? I ran my first Half Marathon this past weekend in Seeley Lake Montana. It is a race that is always ran on the last Saturday of February. If you are familiar with Montana at all, that could be very scary. BUT the weather was amazing, in fact it was unseasonably WARM! Enjoy and enjoy the pics.remember I just 13.1 miles.
