Seared muscovy duck breast is one of Abby's favorites, so this was at the center of our dinner on Valentine's day. I made a blackberry, rosemary and ginger gastrique to go along with the duck breast, and served roasted sunchokes and roasted brussels sprouts with maple syrup, pine nuts, and shaved parmesan as side dishes. Golden beets with beet greens, farro, guanciale, garden herbs and lemon. 2-3 medium golden beets with greens. 1/4 cup diced guanciale. 1/2 cup 1 Tbsp olive oil. 1/4 cup lemon juice. 1 Tbsp chives, minced. 1 tsp mint, chopped. 1 tsp oregano, chopped. 1 tsp tarragon, chopped. 1 tsp dill, chopped. Sunday, January 23, 2011. Crispy, braised chicken thighs with oven roasted tomatoes, olives, and garlic confit. For the oven roasted tomatoes, cut a bunch of roma tomatoes in half, lengthwise, place them cut side up on a baking sheet, drizzle with olive oil, season with salt and pepper, and then scatter some fresh thyme over everything. Roast in the oven over very low heat ( 250F) for 8 hours. Store these in an airtight container, covered in oil, for up to a month. Now, on to this dish. 1 shallot, minced.

Monday, March 29, 2010. Roasted leg of lamb with lamb jus, grilled asparagus with red pepper and piquillo sauce, and saffron rice. In addition to the leg of lamb, I made grilled asparagus with a roasted pepper sauce, and saffron rice. The lamb and rice recipes are from the Ad Hoc at Home. Cookbook that I've been using a lot lately. The lamb and rice recipes are both pretty straight forward, so I'll just paraphrase them here. Saturday, January 30, 2010. This recipe was posted on Mark Bittman's blog the other day. I thought I would give it a try. The crispy garlic and ginger was really good. I also added thinly sliced lap cheong since we had some sitting around our fridge. Here's the recipe. Roasted chickpeas, swiss chard, and lamb sausage. This meal is quick enough to do on a weeknight. I've made a variation of this same chickepea dish here. And I've made several variations of chickpeas and greens here. 1 large can chickpeas.

Tuesday, April 27, 2010. Handmade spaghetti with ramps. Signs of spring have finally begun to show up in the local grocery stores. The other week, I bought a bunch of English peas at the market, and yesterday, the market had a bunch of ramps. Ramps with spaghetti is a pretty classic combination, and I think that they go especially well with fresh pasta. 2 bunches of ramps (about 16). 1-2 strips bacon (optional). Saturday, April 17, 2010.
