Monday, May 17, 2010. I love risotto. Love, love, love it. Ever since my first foray. Into making it at home, it has been a constant in our dinner rotation. This is one of our new favorites. 1/2 pound shrimp, peeled and deveined. 1 Tbsp. butter. 2 Tbsp. extra virgin olive oil, divided. 3 cloves minced garlic, divided. 1 cup Arborio rice. 1/2 cup white wine. 4 cups chicken broth, warmed. 1/3-1/2 cup grated Parmesan cheese. 1/2 bag frozen broccoli. Cook broccoli according to package directions and set aside.

But nothing beats homemade - the real, baked-in-the-oven kind. So when I found this recipe on Annie's Eats. I had to try it. (And p.s., if you've never checked out Annie's blog, make it a priority. It's fantastic! 2 tbsp. unsalted butter. 188; cup flour. 2 cloves garlic, minced. 2½ cups milk. 188; tsp. salt. 1/8 tsp. cayenne pepper.

We have not been to Zelda for the last few weeks, but both Lynn and Brent have been spending time in Opelousas, LA. Lynn's dad was placed on hospice care last Saturday. We ask that you keep Lynn's mom Anna in your prayers for strength and guidance during this difficult time. They would have celebrated their 52nd wedding annivesary on May 13th. Great News - The electrican finally reached the point and called for an inspection. It passed. We are at the one (1) year mark from when demolition started, and new progress is being made.
