Skigirl on Food: March 2008

Ruminations of a mountain girl on cooking, eating and random stuff. Will Mugabe lose his death grip on power? Is anyone else tuned in to the Zimbabwe. Probably not too many Americans are. Zimbabwe is in Africa, so we're always keen to turn a blind eye to most problems on that continent. Unless they're being loudly championed by a number of celebrities, that is. Then we'll make a donation. People in Zimbabwe aren't being slaughtered or rendered homeless there like in Darfur, but they've had a despot.

Skigirl on Food: Limey
http://skigirlonfood.blogspot.com/2010/05/limey.html
Ruminations of a mountain girl on cooking, eating and random stuff. Have you been to Lime? It's a Mexican restaurant with four locations in Denver. They have a killer cocktail menu and some pretty good food, but I must say, I think I'm too old to eat there. I have had the (unfortunate? I had the shrimp fajitas (despite the fact that whenever I (very infrequently) order fajitas, I feel like I must be in a freaking Applebee's or something). The portion was VERY generous and really quite tasty. Lots...And s...

Skigirl on Food: July 2009
http://skigirlonfood.blogspot.com/2009_07_01_archive.html
Ruminations of a mountain girl on cooking, eating and random stuff. Yellow summer squash and shrimp whole wheat couscous. It's very suddenly become the season of abundance. Well, perhaps not suddenly, but I very recently spent three weeks in winter in the southern hemisphere which has thrown off my internal calendar completely. I picked up a cookbook I have called 'A Passion For Vegetables' by Paul Gayler. I did have an overabundance of green beans and fresh picked cherry tomatoes (harvested from my gard...

Ruminations of a mountain girl on cooking, eating and random stuff. I know I've mentioned before that about 70% of my meals (or maybe even more? Are vegetarian. By choice. It's not even a conscious choice most times anymore; it's just how we eat. But sometimes, we really enjoy meat. Today is a special occasion, so I've taken a buffalo filet. We do not grill them. We pan sear them on the stove then pop them into a really, really. And then thank me later. Serves 2 (if you're not a big meat eater! Remove fr...

Skigirl on Food: April 2009
http://skigirlonfood.blogspot.com/2009_04_01_archive.html
Ruminations of a mountain girl on cooking, eating and random stuff. One of my favorite go-to meals on a cold night is Green Posole Soup, a recipe by Sarah Moulton. That I tweak to suit my mood. It's mind numbingly easy, and it requires little in the way of preparation and even less in the way of shopping. Hopefully, you generally have the basics in your pantry. 2 tbsp olive oil. Large pinch red pepper flakes (if you like heat). 1 medium white or yellow onion. 1c green (tomatillo) salsa. Overall this is a...

Skigirl on Food: May 2009
http://skigirlonfood.blogspot.com/2009_05_01_archive.html
Ruminations of a mountain girl on cooking, eating and random stuff. I just had to share this with you. I grew this radish from seed in the raised bed in my back garden. I planted it on March 19th and harvested it in late April. It took some water, some TLC (like covering it when it snowed and on cold nights) and some patience. It was two bites.and it was perfection. Gardening is really cool. More things to do with oats. I just realized I've never posted my method for museli! Cinnamon, to taste (I use lot...

Ruminations of a mountain girl on cooking, eating and random stuff. I once again find myself turning to Jack Bishop in my time of vegetative need. When you get a celery root in your CSA bag you sometimes need some inspiration. Luckily, Jack is usually there for me. This recipe comes from his superb ' Vegetables Every Day. Book which I have mentioned countless times on this site. I wish I hadn't been in a hurry yesterday so that I could produce a photo of the very dirty, very ugly (but very delicious!
