I love left over beans, I just pop them in the freezer and when I need canned beans, I defrost my beans and they are ready to go in a recipe. This recipe is from the Pennzey catalog, but revised to use in the pressure cooker. 2 cups of black beans. 1 16-oz can fat free refried black beans. 1 TB canola oil. 1 onion, chopped. 1 cup chopped fresh tomatoes. 1 TB fresh cilantro, finely minced. 1 1/2 cups water.

Pressure cooking with LaRee. Tuesday, August 16, 2011. 2 cups cooked rice (We used the Orgainic Harvest Medley from Cosco). Soak all day 1 cup rice to 1 1/2 cups water. Rinse and drain and put in pressure cooker with 1 1/2 cup water and 1/4 tsp. salt. Pressure for 10 minutes, release. Drain extra water off.
