Chinese Tomato Eggs and Thai/Viet Papaya Salad. August 3, 2015. I served it over rice with stir-fried boy choy with garlic and lap cheung (chinese sausage). 1 Green unripe papaya, shredded. A handful of cherry tomatoes, quartered or grape tomatoes, halved. Half a large carrot, shredded or 1 small carrot, shredded. Fresh Thai Chilis (as much heat as you want). Green beans (I substituted cucumber because that’s what I had). Herbs: cilantro, viet/thai basil, vietnamese mint, (whatever you have on hand).
