Friday, December 26, 2014. 聖誕不是派對就是聚會，良朋熱鬧過後，往往剩下一堆食物。打邊爐的材料翌日落鑊炒炒就成，飲品怎麼辦？自從二世祖唐英年取消紅酒稅，紅酒隨時比玉冰燒更便宜，溝完fruit punch或sangria用剩的當然也不需要許仕仁開飯級數的天價貨色。散席後沒有甚麼人想獨自飲這種悶酒，正好撿回家收留。如何處置？天氣冷吃點厚重的，就煮個紅酒燉牛肉（boeuf bourguignon）罷。 別以為西餐就矜貴，紅酒燉牛肉本是法國農家菜，紅酒入饌不是裝模作樣擺排場，而是用產酒區不缺的次等酒軟化質地堅韌的次等肉，門當戶對實用先行。既然如此，我們也毋須講究肉質了，隨手到凍肉舖買點最廉價的急凍牛肉，解凍過後，捲起衣袖入廚去也。 材料（三至四人份量）：. 西芹兩至三瓣（$10一大棵，每棵十多瓣）. 雞髀菇一顆（$5一兜，每兜兩至三顆，又名杏鮑菇）. 煙肉兩條（$23一包，每包六至七條）. 九層塔半棵（$5一包，每包三至四棵）. 甘筍去皮切片，洋葱切碎，西芹洗淨切粒，番茄切小件，雞髀菇切片，蒜頭剁碎；. 工序看來不少，但大部份時間都是等待，煮起來挺悠閑的&#...煙花會謝，...

Sunday, March 24, 2013. 練習煮意大利飯（risotto）也煮了好幾年，感覺還是略有不足。正統意大利飯是要讓短粳米在攪拌過程裡釋出澱粉，形成黏稠醬汁。要有汁，就要有水份，水份來自白酒和上湯。白酒倒好辦，麻煩的是上湯。不想光顧史雲生，拿雞粉充數更是免談，可是又提不起勁為了區區一頓飯自己煮一鍋湯，況且也用不了那麼多，拉扯之下，結果平日煮意大利飯都無湯可用，口感難免差了些。後來有習慣入廚的朋友建議把湯放進冰格保存，每次要用上湯的時候拆兩塊「湯冰」出來就成。此計大妙，趁著週末有點餘暇，發狠煮了個洋蔥湯。 接下來是牛腩。佳寶買回來的急凍貨，一條牛腩摺成約五吋乘四吋厚一吋的方塊，先在沸水裡泡一下去除雪氣，再跟剛炒好的洋蔥齊齊扔進鍋裡，加水加鹽加胡椒粉，慢火煲兩個小時，大功告成。 兩人份量的白酒炆牛腩。曾想過不用水而用洋蔥湯去煲飯，效果說不定猶勝海南雞飯裡的雞油飯，但一想到之後洗飯煲洗餐懵，還是見好就收。 洋蔥兩個（湯渣，循環再用）. 牛腩一條（湯渣，循環再用）. 西芹兩條（十元一棵，每棵十幾條）. 65290;＊＊. 首次實驗就有完美結局，那叫奇跡。這一餐無疑不完美...牛腩的開始與終結...
