After ‘preaching’ about the importance of starting my mornings with a “BANG”, I’ decided I’d have to follow through with a good example. So, I woke up at 5:30 am and headed out to use up a free class I had with Bikram Yoga Saanich. Even with a drowsy yoga class, I feel amazing. Butternut Squash and Quinoa Stew. Can you love Quinoa too much? I had it cold with greek yogurt for breakfast this morning; see the basic recipe here: beaming-breakfast-bowl. My Lunch. and the DELICIOUS recipe I'm sharing (yes.thats a big chunk o' chicken). I used it for the Gluten Free Cupcakes I made last night (more on that in a future post), and I made an amazing stew with it for dinner. I even ate that * * today and took the leftovers for lunch! SUCH a thoughtful guy! Might as well be a food group.
