Thursday, 3 November 2011. Super healthy noodle salad. I made this up when I didn't have much in and was stuck for something healthy and filling. It goes a long way and this quantity makes enough for two big meals and two big lunch boxes the next day. It could easily feed six, we're both just greedy! Thursday, 3 November 2011. I seem to be a bit fixated on aubergines at the moment. I've been making a lot of Turkish inspired food and I made this as part of a little Turkish mezze meal I made for Mr B. I served this with some salads, lamb kofte kebabs, pitta breads and some hummus.
