Monday, November 14, 2011. Nutty Sponge Cake with Truffle Ganache. 100 g hazelnuts,roasted and crushed roughly. 5 tbsp cornflour( you can use here just white flour as well). Ca half cup of strong coffee for moisten the cake later. Whisk egg yolks with 3 tbsp of sugar until pale yellow. In a separate bowl whisk the egg whites with pinch of salt until fluffy,then gradually add the rest of the sugar,whisking until completely stiff and holds shape well. 300 g dark chocolate,chopped. 50 g ground almonds.

Tuesday, January 10, 2012. Cranberry and White Chocolate Muffins. 1 tsp baking powder. 2,5 dl natural yogurt or sour cream. 100 g white chocolate. 1 lemon,grated rind. Handful of dried cranberries. Mix together all dry ingredients. In a separate bowl whisk the eggs,slightly cooled melted butter and yogurt or soured cream. Now still stirring,add gradually the flour mix. Add chopped chocolate and cranberries. Spoon the mixture into the prepared muffin tin. Bake at 200C for 20 min. Sunday, January 8, 2012.

Tuesday, December 3, 2013. GERMAN GINGERBREAD COOKIES "LEBKUCHEN". Melt the sugar until it starts bubbling,then stir with wooden spoon until brown in colour. Lift the pot into the sink. Pour in quickly the hot water,be very careful as it will be very dramatic! When all the steam is cleared,lift the pot back to the heat,stir until all the caramel is dissolved. Tuesday, February 7, 2012. 1 tsp baking powder. 500 g soft cheese. 200 g white chocolate. 180 g mixed berries(frozen). 100 ml fresh cream. 0,5 tsp cinnamon). 180 g mixed berries. Whisk the egg whites until soft peaks form,gradually add 1/3sugar while still whisking.It is ready when egg whites hold its shape on the spoon. Mix egg yolks with 2/3 of sugar until its doubled. Gently fold egg yolks into the egg whites.Sieve in the flour,mix as little as possible until its combined. Cut the base into 3 circles.

Thursday, July 28, 2011. White Chocolate and Raspberry Sundae with Meringues. 200 ml fresh cream. 200 g white chocolate. Juice of the half lemon. Bring the cream to boil,take off the heat and add the chopped chocolate,let stand for 1 minute and then stir until completely smooth.Squeeze in the lemon juice. Warm vanilla ice cream in its container until just easy to scoop. Fill 4 sundae dishes with two of ice cream scoops. Scatter raspberries onto the ice cream and meringues on top. Sunday, October 30, 2011. Baked Boozy Apple Bombs. 70 g butter,soft. 50 g roasted hazelnuts. 2 passion fuits or passionfruit syrup. Crush the nuts slightly. Mix the filling together. Cut off the top ca 1 cm of the apples,core and scoop out some flesh. Divide the stuffing among the apples. Cover with foil and bake at 200C for 15 min,take foil off and bake until ready.
