Crockpot) Apple Cider Chicken. 3 lbs chicken breasts and thighs. 1 onion, chopped. 3 cloves garlic, pressed or minced. 3 Golden delicious apples, sliced. 1 cup apple cider. 1/2 cup apple cider vinegar. 2 T olive oil. Season the chicken with salt and pepper and place it in the crockpot. Add TWO. In a bowl, combine THREE and add to the crockpot. Cook on high for 4-6 hours or on low for 6-7. Not the prettiest looking, but they are filling and yummy! 1/2 cup unsweetened applesauce. 6 egg whites (2 cups). 1/2 cup pumpkin puree. 1/2 cup coconut flour. Preheat the oven to 400F. In a bowl, combine ONE until well mixed. Add TWO and mix well. Line your muffin pan with liners and pour some batter (about 1/3 full) in the muffin holes. Makes 12. Bake for 30-40 minutes or until set. Adapted from Wellfedhomestead.com.
