Meg's Vegan Recipes: October 2007
http://megsvegrecipes.blogspot.com/2007_10_01_archive.html
Saturday, October 20, 2007. I can't find veg Pho anywhere in Orlando and I've been craving it for years(! So I finally cooked up my own:. 2 pods of star anise. 1 medium size onion cut into several large chunks. 8 cloves of garlic, halved. 1 inch piece of ginger, coarsely sliced. 8 cups vegetable broth (I use Vegebase and water). 3 tablespoons of soy sauce. 1 package of cooked rice noodles. 8 oz package of seitan, cut into slices. A few scallions, finely chopped. 2 cups of bean sprouts. 3 TBS of oil.
Meg's Vegan Recipes: Home Fried Potatoes
http://megsvegrecipes.blogspot.com/2008/09/home-fried-potatoes.html
Monday, September 08, 2008. Aka, crunchy, salty, heavenly goodness. 3 tablespoons earth balance butter. 3 russet potatoes, cubed. Salt and pepper to taste. Rinse the potatoes after cubing and make sure to dry them. REALLY dry them, or the potato police will come after you for turning crispy potato yumminess into soggy icky mush. And there you go! Try not to eat them all in one sitting or you may get a tummy ache.of course the pain would be worth every crunchy salty bite :). 5:42 PM, September 10, 2008.
Meg's Vegan Recipes: April 2008
http://megsvegrecipes.blogspot.com/2008_04_01_archive.html
Sunday, April 20, 2008. Veggie Samosas with Tamarind Dipping Sauce. Sunday, April 13, 2008. Thai Red Curry with Tempeh. At 12:30 in the morning I was craving. Thai Red Curry, and I could not find a single recipe that sounded decent or authentic tasting. So, I kind of followed the basic guidelines of making a curry, added my own ingredients, and threw this together. It turned out to be pretty fabulous. 2 tablespoons of vegetable oil. 2 large cloves of garlic, minced. 1 inch piece of ginger, grated. Add th...

http://megsvegrecipes.blogspot.com/2008/04/veggie-samosas-with-tamarind-dipping.html
Sunday, April 20, 2008. Veggie Samosas with Tamarind Dipping Sauce. I've been waiting for this recipe ever since I found your blog. COME ON, SHARE! 5:40 PM, August 13, 2008. The recipe I used wasn't that great and i wanted to tinker with it before posting and recommending it. I haven't had the chance to make it again yet but I'll update with the recipe whenever I perfect it (hopefully by next month) :). 12:52 PM, August 22, 2008. That photo is very beautiful, by the way. 11:31 PM, August 29, 2008.

Saturday, October 11, 2008. Baked Egg Rolls and Duck Sauce. This is vegetarian, not vegan, because of the egg in the wrapper. Substitute with a vegan version of your choice*. I made baked vegetable egg rolls and home made duck sauce today! I bought cabbage to make egg rolls a few weeks ago and kept putting it off because I couldn't find a decent recipe to follow. I kind of just threw things together and it turned out surprisingly well. I also remembered to take pictures along the way:. Baked Egg Rolls an...

SoyGuy: September 2008
http://soyguy.blogspot.com/2008_09_01_archive.html
Tuesday, September 16, 2008. We ate it too fast to photograph! Lance got home from school last night around 8pm and neither of us felt like something fussy for dinner. At first, I thought: bleh, another night of microwaved veggie burgers. But then, with a happy lightning bolt of inspiration, and some lovely tempeh that Lance brought home, I whipped up.drum roll. Tempeh Fajitas with Lime-Wasabi Mayo! 2 red/green peppers - cut in strips. 1 onion - cut in strips. 1 block tempeh - cut in strips. We served th...
SoyGuy: VeganMoFo - Dr. Soymilk (Or How I Learned To Love The Bean)
http://soyguy.blogspot.com/2008/10/veganmofo-dr-soymilk-or-how-i-learned.html
Wednesday, October 8, 2008. VeganMoFo - Dr. Soymilk (Or How I Learned To Love The Bean). I was a sickly, nerdy kid. You wouldn't know it now, but I was way tall and way skinny, with a big bushy head of hair, sallow complexion, and deep-set brown eyes. I was allergic to almost everything and, as I put it facetiously, all my mom fed me was blue corn cereal, soymilk, and acorn squash. Tempeh tacos, too, but it's fun to gripe. Thus started my love/hate childhood relationship with soymilk. "Ah Soy! Long story...
SoyGuy: August 2008
http://soyguy.blogspot.com/2008_08_01_archive.html
Sunday, August 31, 2008. Either way, I'm really enjoying the world of vegan desserts - or as my mom would say, "Food that you can have a cup of tea with". Recently, while my parents were visiting us, I came up with the idea to make spelt shortbread and serve it with some lovely coconut milk ice cream and balsamic strawberries. I took a whole wheat shortbread recipe. 2 cups whole grain spelt flour. 1/2 cup evaporated cane juice/organic sugar*. 1 cup Earth Balance, or similar vegan margarine, cold. Press d...

Friday, October 24, 2008. I want to post and even have high res pictures of my freezer.lol. Unfortunately, my job stepped things up lately and Lance and I have had barely any time to eat, much less post about said food. In the meantime, I'll take this moment to say that we're visiting Ethos Vegan Restaurant in Orlando tonight on the way to a professional certification exam for Lance. It'll be our first time eating at Ethos, so I'm really excited. =). Tuesday, October 14, 2008. That plus veggies - voila!
SoyGuy: December 2008
http://soyguy.blogspot.com/2008_12_01_archive.html
Monday, December 1, 2008. Anything mashed and fried in oil. I have a confession to make: I try to turn most leftovers into a pancake. If it can be mashed up and tossed into some bread crumbs, I will pan fry it and declare it an "Olde World" specialty. When I ate eggs, I would even take leftover noodles, pour egg on them, griddle them up and tell Lance that I was making chinese food. But, yeah, a few tablespoons of melted Earth Balance and some cooking time later, we had nice little puree pancakes, with c...

SoyGuy: VeganMoFo - Totally Surprised
http://soyguy.blogspot.com/2008/10/veganmofo-totally-surprised.html
Tuesday, October 14, 2008. VeganMoFo - Totally Surprised. I'm really surprised and grateful that my job has been able to get us vegan lunches two days in a row! We're currently under the gun with a software release and needed at our desks for much of the day, so it's been a real relief that a corporation could actually get vegan lunches right two days in a row.lol. That plus veggies - voila! This is so much better than the years of people saying, "You don't eat meat? So, we can get you fish? How to feed ...
SoyGuy: VeganMoFo - The Converted Tart of Greatness
http://soyguy.blogspot.com/2008/10/veganmofo-converted-tart-of-greatness.html
Tuesday, October 7, 2008. VeganMoFo - The Converted Tart of Greatness. So, I love cookbooks, of all kinds. I don't know if it's the same gene that makes me like blogs, but from the moment that I could get my own library card, I came home with at least three cookbooks every trip to lovingly read, page by page. Now when I read: "3 eggs whites, whipped", I'm thinking, "Okay, don't think egg replacer will work.but maybe flax seeds.wait, whipped silken tofu! So I did it.and it was ALMOST there. So, I ...Crust...
SoyGuy: I'm Sorry, the Thanksgiving Edition
http://soyguy.blogspot.com/2008/11/im-sorry-thanksgiving-edition.html
Thursday, November 27, 2008. I'm Sorry, the Thanksgiving Edition. I haven't posted in forever. What can I say? Life has been hectic. I've been doing a lot of vegan cooking, but it's been the "holy crap, it's 8 o clock! Throw a veggie burger in the microwave and I'll saute those baby carrots you were going to take for a snack tomorrow" kind. The vegan menu was vast, and I wish I had pictures of it all, but, in the end, we'll just all use our imaginations and get on with our lives. Since I can still rememb...

Thursday, November 30, 2017. Spent $200 on a DNA test - 23andME. This July, after much research for the best DNA kit, I caved and purchased the Health Ancestry Kit from 23andMe. For $199 Shipping. YIKES. I got the kit because reviews said it gave the customer a more in depth DNA reading when it came to Ancestry on the map, and much more details about Health/Wellness/Traits. There is a sale right now for the Holidays 2017 www.23andme.com. Website to see if my results had arrived. THEY DID! Below is the br...

Megan's Journal on Vegetable Island in Konstanz, Germany. Wednesday, July 6, 2011. After a couple bus rides, we reached the Rheinfall! It is a beautiful waterfall that is absolutely massive! We took a little boat to a big rock in the middle and got to climb all the way up.about a million slippery stairs.until we reached the top! It was sooo pretty and a little cold. It rained early that day, so I'm glad it stopped raining by the time we got there though. It was soooo funny.and scary! Sunday, June 26, 2011.
