Halibut with kumquat Cranberry relish. 6 rabbit legs, cut into 2 or 3 widthwise. 2 Tbsp. olive oil. 2 Tbsp. flour. 1 medium carrot, diced. 2 shallots, chopped. 1 tsp tomato paste. 1/2 cup) dry white wine. 28 oz) can of crushed Italian tomatoes. 1 garlic clove, halved and germ removed. 1 sprig fresh thyme. Monday, August 16, 2010. Basic Beer Battered fish. 1 beer (any beer will work). Salt and pepper to taste. Teaspoon of baking powder. Oil (I prefer to use peanut oil, but vegetable oils will work). Note: Prepare bacon, lettuce and tomato like you would for your blt’s. Add this beer battered fish and you will have a fish blt that is filling and delicious. 8226; ½ cup soy sauce. 8226; 1 ¾ cups water. 8226; 1 teaspoon fresh grated ginger or you can substitute ¼ teaspoon dry. 8226; 1 teaspoon chopped garlic.

Monday, February 2, 2009. Corned Beef Chicken Bake. This is from my friend, Angie. I hate corned beef, but like this dish. Corned beef sandwich meat slices. 8 oz Sour Cream. Cream of Onion soup. In a casserole dish, put 4-5 slices of corned beef under chicken breasts. Place uncooked bacon on top of the chicken. Bake at 350 degrees for 30 minutes. Pour off any liquid. Mix together sour cream and cream of onion. Pour cream on chicken. Bake another 30 minutes. I serve this with rice and a veggie.

Into the Wild with Mike. Tuesday, November 24, 2009. Sliced roasted turkey meat or chunks. Swiss or provolone cheese slices. Build sandwiches with the turkey, ham and cheese. Heat skillet to med heat. Quickly dip sandwiches one at a time in batter and place on skillet. You dont want the batter to soak all the way through the bread. Friday, January 23, 2009. This is a great one to freeze. It makes 10 enchiladas, I freeze half. 15 lbs ground beef. 2 cans chili beans. 1 jar enchilada sauce. 10 tortillas (8 in). Cook beef and onions until meat is done; drain. Stir in the beans, half of the enchilada sauce and salsa. In a skillet, heat 1/4 in. of oil.
