Monday, February 2, 2009. Corned Beef Chicken Bake. This is from my friend, Angie. I hate corned beef, but like this dish. Corned beef sandwich meat slices. 8 oz Sour Cream. Cream of Onion soup. In a casserole dish, put 4-5 slices of corned beef under chicken breasts. Place uncooked bacon on top of the chicken. Bake at 350 degrees for 30 minutes. Pour off any liquid. Mix together sour cream and cream of onion. Pour cream on chicken. Bake another 30 minutes. I serve this with rice and a veggie.

Into the Wild with Mike. Tuesday, November 24, 2009. Sliced roasted turkey meat or chunks. Swiss or provolone cheese slices. Build sandwiches with the turkey, ham and cheese. Heat skillet to med heat. Quickly dip sandwiches one at a time in batter and place on skillet. You dont want the batter to soak all the way through the bread. Cook on skillet until golden brown on each side like you are making a grilled cheese sandwich. Serve with leftover cranberry sauce or jam. Subscribe to: Post Comments (Atom).

Into the Wild with Mike. Tuesday, June 15, 2010. Yes it has been awhile since I have updated my blog. So far everything has been great up here in Alaska! I have been very fortunate to be working with a great group of people this year. I have worked alot as of late, but now a burden has been lifted since my sous chef Travis arrived. New Twist to Angel Food Cake. 1 pkg (16 ounces) angel food cake mix. 1 pkg (2.25 ounces) sliced almonds, chopped. 1/2 cup powdered sugar. 1/2 cup strawberry preserves. 1 (8 ounces) container sour cream. 1 (8 ounces) container frozen whipped topping, thawed. 1/2 teaspoon almond extract. I spent the Easter weekend with Brie and her family near Milwaukee in Menomonee Falls at her grandparent's house. I was able to meet alot of her family. I had a great time with her family and they are alot like ours with grandchildren of all ages. We had Halibut and Salmon one night for dinner. Monday, March 30, 2009. 2 cans cream of mushroom soup. 1 onion, diced. 1 (13 oz) can evaporated milk. 1 (8 oz) pkg noodles, cooked. 2 cups potato chips. Combine all ingredients and top with crushed potato chips. Bake at 400 degrees for 45 minutes. Wednesday, March 25, 2009. Graham Streusel Coffee Cake. 1 1/2 c. graham cracker crumbs. 3/4 c brown sugar. 3/4 c chopped nuts. 1 1/2 tsp. cinnamon. 2/3 c butter, melted. 1 (18 1/2 oz) pkg. yellow cake mix. 1/2 c confectioners' sugar. Friday, January 23, 2009. This is a great one to freeze. It makes 10 enchiladas, I freeze half. 15 lbs ground beef. 2 cans chili beans. 1 jar enchilada sauce. 10 tortillas (8 in). Cook beef and onions until meat is done; drain. Stir in the beans, half of the enchilada sauce and salsa. In a skillet, heat 1/4 in. of oil.
