Mint Creek Farm

Friday, April 30, 2010. I love brisket. And since I love brisket, I tend to cook a ton of it. So, I am always on the lookout for an awesome brisket recipe and one of our CSA members, Ameeta, shared this one with me. I have to admit it was pretty spectacular! Brisket Braised in Porter. Adapted from Bon Appetit. Shared by CSA Member Ameeta. 2t fresh ground black pepper. 2t dry mustard (such as Colman's). 2t chopped fresh sage (I used dried). 2t chopped fresh thyme (I used 2 sprigs). 1 6-lb flat-cut brisket.

Friday, April 30, 2010. As we transition from our Winter CSA into our Summer CSA, I would like to share some of our member contributed recipes. These recipes were an important part of our last winter newsletter. Tuesday, March 30, 2010. That's right, I said Lamb Ham! We have just started smoking and curing legs of lamb and selling them as whole legs, halved legs or as sandwich slices. All lamb ham products are $10/lb and available at the farmers market or online. Since this is a new product, I wanted to give it a try. Well, I have to admit it- this actually tastes just like real ham made from a pig! Tuesday, March 23, 2010. This month we introduced a brand new meat product-. 1-2# Veal Short Ribs (Spareribs).

Mint Creek Farm: September 2009

Wednesday, September 23, 2009. Honey It is not what you think it is. At least the stuff you buy in the grocery store, is not what you think it is. Actually, no one knows what it is. We do know one thing, it is not real honey. And some interesting facts came to light during that show. Here is a snippet of that interview:. I started buying my honey locally to help ease my allergies. Now I buy my honey locally to support my local beekeepers, including the neighbor that cares for Mint Creek Farm's hives ...

The Sustainable Cook: March 2009

http://sustainablecook.blogspot.com/2009_03_01_archive.html

Sunday, March 29, 2009. Root vegetables are some of the most maligned of ingredients known to humankind. And the most reviled of the maligned? The turnip. For centuries, spurned by the well-to-do, the bitter, round, hard root was the staple of many a poor European family. That sulfurous stink probably arouses a certain revulsion and shame in many of my generation and the one preceding it. The Sustainable Cook: May 2008

http://sustainablecook.blogspot.com/2008_05_01_archive.html

Sunday, May 25, 2008. Me with two of my favorite things! A great pleasure of Spring is the ruby red, celery-like, stalks of rhubarb gracing many a table at the Green City Market. Thankfully, my son won’t have to wait twenty-plus years to enjoy the pleasures of rhubarb. Thanks to Farmer Pete of Seedling. Rye Crackers To...

The Sustainable Cook: Local Lobster

http://sustainablecook.blogspot.com/2009/08/local-lobster.html

Monday, August 17, 2009. Okay, maybe not. But with the exception of some lemon juice, all the ingredients that surrounded our East Coast crustacean were produced right here in the Midwest. While Mike pried apart our lobster, I sautéed a small shallot and 1 tablespoon of finely chopped green onion in a pan. As he sucked on the lobster legs, I chopped the meat and added it to the pan with the kernels of our smoky corn with about ¼ cup of the browned butter, the juice of one lemon and 1 tablespoon ...Food a...
