We've been eating a lot of quinoa lately. For a seed, its pretty delicious. We tried this recipe tonight and I think its a keeper. Gluten Free Cheesy Chicken and Quinoa. 1 cup uncooked quinoa, rinsed and drained. Salt and pepper to taste. 1 ½ cups cheese of your choice (I used triple cheddar.). 2 cups chicken or vegetable stock.
