We've been eating a lot of quinoa lately. For a seed, its pretty delicious. We tried this recipe tonight and I think its a keeper. Gluten Free Cheesy Chicken and Quinoa. 1 cup uncooked quinoa, rinsed and drained. Salt and pepper to taste. 1 ½ cups cheese of your choice (I used triple cheddar.). 2 cups chicken or vegetable stock. September 4, 2009. So it's been forever since I last posted.been a facebook junkie but it doesn't give me enough space to tell whats going on in our little family. Can't believe Carson is almost 2.
