I am back from a much needed week at the beach :). I thought I would post this recipe first. I love a nice baked potato with a salt crust. Since I love them, I thought you might also, and I had failed miserably on the first attempt this week at the beach. You can use this same recipe with Red Potatoes, just adjust the baking time. Red Potatoes don't take as long to cook. I like to add a little of my fresh rosemary from my herb garden :). Total Servings 4-6 Total Cost: $1.50. 4-6 Large Baking Potatoes.

Crispy Baked Red Potato Fries. 1/4 Cup olive oil. 2 tsp of Kosher Salt, seasoned salt, or regular salt. 1 tsp of Black pepper *You can use 1/8 tsp of Cayenne pepper for a little kick. 1 tsp of Basil. 1 tsp of Garlic Powder. This cheesecake is very light but full of pumpkin flavor :). 7 oz 1/3 less fat Philadelphia Cream Cheese. 1/2 cup pureed pumpkin (canned is fine). 1 tsp pumpkin pie spice. 1/4 cup brown sugar, unpacked. 8 oz Cool Whip Free, thawed (I bought two so I had some to top on each slice). 9 inch reduced fat Graham Cracker Crust.
