Sorry for the extremely late update as I have been busy over the past few months, working feverishly hard to pursue my career in medicine and I am glad to say that I have finally graduated as a doctor. HOORAY! Fried Masterstock Chicken with Chilli Caramel and Orange Salt. 1 x 16kg chicken. Vegetable oil, for deep frying. 600ml light soy sauce (I used 1 cup). 1 cup caster sugar.

I mean who can resist crispy, tender succulent chicken with beautifully sticky glutinous rice stuffing? Recipe for roasted chicken with glutinous rice stuffing:. Adapted from Pig's pig's corner, Rita's blog and noobcook. Salt (I used 1/2 tsp). 1 tbs grated ginger. 1 tbs garlic - finely minced. 2 tbs Lee Kum Kee char siew sauce. 1 tbs dark soy sauce. 1 cup chicken stock.

Recipe adapted from Chef Wan's Spicy Grilled Chicken/Ayam Panggang Percik. 1 litre / 32 fl oz / 4 cups coconut Cream (Santan Pekat) (I used 650ml). 1 kg / 2 lb 3 oz Chicken, cleaned and halved lengthwise (mine was 1.075kg, I marinated it also with 1/4 tsp salt, 2 tsp sugar, few grinds of pepper and 2 tbsp soy sauce). 2 Lemongrass (Serai), bruised. 189; tsp Turmeric Leaves, finely sliced. 1 Tbsp Cumin Powder. 1 Tbsp minced Garlic (I used 1 bulb).

Acar awak recipe adapted from Florence Tan. 225g cucumber, seeded and cut into 0.3cm wide strips of 3cm length (425-500g) -rub with 1tbsp salt into the cucumber strips and leave aside for 1 hour. Place marinated cucumber strips on a piece of muslin cloth and squeeze out as much liquid as possible. Spread the cucumber out on a try and sun for 2-3 hours. This makes it crunchy. (optional). 185g carrot peeled and cut into 0.3cm wide strips and 3cm length. 10 long beans cut into 3cm.
