I modified a recipe from the complementary Lunds and Byerly's Real Food magazine. This recipe is perfect for meatless Mondays. I think I crossed a line in making this dish. This dish calls for vegetables to be roasted at extremely high heat for long periods of time. Which might not be that big of an issue for most people. But I chose to make this dish on one of the only hot, humid summer days we've seen in Boston so far. And I live in 300 square feet.
