Tuesday, April 28, 2015. Daily Post: Counting Crows. My daughter and I were talking during our walk about the impacts we are contributing to our environment. I was thinking back on my many conversations, and once they heard what I was up to, they become inspired and say, "You should run for office! Today, as I conversed with my daughter, I put myself in a politicians shoes, pretending I was the president. My question is, why wouldn't one look at the long-term affects that are impacting our environment?

Recipe for today: Warm Lentil Salad Sweet Potato and Olives. 2 Medium sweet potatoes, peeled and diced (into approx 1" pieces). 3 Tbsp Olive oil, divided. 1 Medium onion, finely chopped. 2 Cloves of garlic, minced. 1-1/2 C Puy OR Green lentils. Few sprigs of fresh thyme OR 1/2 tsp dried thyme. 3 Tbsp Red wine vinegar. Heaping 1/2 C Marinated olives. 2 Tbsp Chopped parsley. Salt and Pepper, to taste. Sunday, September 28, 2014.
